Billy and Patsy Frey started selling boudin and cracklins from a Krotz Springs gas-station counter in 1995 to draw in customers, and prize wins at the Port Barre Cracklin Festival eventually led to a dedicated Lafayette store in 2019. The family still runs production out of its own Port Barre facility rather than outsourcing to a co-packer.
