Nguyen Van Giang invented ca phe trung here in 1946, whipping egg yolk and sugar into a meringue-like cloud over strong Vietnamese coffee when fresh milk was scarce. His family still serves the original recipe at 39 Nguyen Huu Huan, reached down a narrow passage off the street.
