Eggenols bakes gaufre de Liège from its shop on rue des Guillemins, the dense, pearl-sugar waffle that distinguishes Liège's version from the lighter Brussels waffle. The pâtisserie has collaborated with regional design initiative Label 5.9 to present the waffle as part of the city's culinary identity.
