Founded by the late Mott Green, this farmer-owned cooperative pioneered tree-to-bar chocolate made from local Trinitario cocoa in the hills of St. Patrick. Bars run from 60 to 100 percent alongside sea-salt caramels, cocoa butter, and a cocoa tea called Smilo.
