Founded in 1916 on the Amakusa coast, Kameman calls itself Japan's southernmost natural sake brewery and packs its fermenting moromi with ice rather than mechanical refrigeration to manage the subtropical climate. The fourth-generation brewery draws spring water from Mount Ozekinuma and Yamada Nishiki rice for its Manbo and Tanshu labels.
