Kikkodo

Honmachi, Bikan Historical Quarter, Kurashiki, Okayama, Japan

Kikkodo is the Honmachi confectioner credited with inventing murasuzume, the folded sparrow-shaped castella-and-red-bean sweet, in 1877 after Kurashiki's mayor named the confection. The shop still sells murasuzume alongside its baumkuchen and offers hands-on baking sessions from the same Bikan-quarter storefront.
