La Distillerie de Saloi

At Moya on Anjouan, this distillery works with more than 350 local producers and puts roughly a hundred tonnes of ylang flowers a year through fuel-efficient stills, replanting as it burns. Since 2016 it has quietly become the island's model for doing perfume's rawest material right.
