Lilamand has made candied fruit and calissons by the same family method since 1866, hand-peeling whole melons and pineapples before candying them in Provence's traditional slow-syrup process. Alongside its original Saint-Rémy-de-Provence workshop, the fifth-generation confectioner runs a shop on Rue de la République in L'Isle-sur-la-Sorgue stocked with nougats, fruit pastes and preserves.
