Morihachi (森八)

Morihachi has made wagashi in Kanazawa since the early 1600s, and its signature Chouseiden, a pressed sugar confection unchanged for over 330 years, is counted among Japan's three most celebrated traditional sweets. The shop still hand-crafts yokan, dorayaki, and monaka using local ingredients such as Noto Peninsula adzuki beans and Goto Island sweet potatoes.
