Pastéis de Belém has baked its custard tarts since 1837 from a recipe originally sourced from monks at the nearby Jerónimos Monastery, a formula known today to only a handful of pastry chefs sworn to secrecy. The bakery's tiled dining rooms in Belém still serve the tarts warm from the oven, dusted with cinnamon and sugar at the table.
