Praskitiko (C. Constantinou Ltd)

Praskitiko has made halloumi, anari, flaouna and trachanas by hand in the village of Prastio, near Avdimou, for four generations, with recipes passed from grandmother Christina down to her great-grandson Vassilis. The family dairy still uses the same techniques for its packaged, brined and mature halloumi that it has followed for more than two centuries.
