Thou Mayest roasts its coffee in small batches and runs its cafes as neighborhood gathering spaces rather than pure takeaway counters, with locations spanning River Market, Crossroads, and the Nelson-Atkins area. Its 2019 acquisition of Quay Coffee folded another local roaster into the lineup without changing the house approach to sourcing and roasting.
