Vefa Bozacısı

Vefa, Fatih, Istanbul, Turkey

Hadji Sadık Bey, an Albanian migrant who arrived in Istanbul in 1870, spent six years carrying his improved boza recipe through the streets in copper containers before opening a permanent shop in Vefa in 1876. His fourth-generation descendants still run it today, serving the fermented millet drink alongside grape vinegar and Ottoman-style syrups made to the original recipe.
