Yukawa Sake Brewery has fermented rice with water filtered through the mountains around Yabuhara since 1650, making its Kisoji and Juroku-dai Kurouemon labels near the trailhead into the Ontake range. The sixteenth-generation family still relies on slow-starting yamahai and kimoto methods that depend on wild airborne lactic bacteria rather than added acid.
