What Gilli's is known for
Founded by the Swiss Gilli family in 1733 under the last Medici, Gilli is widely cited as Italy's longest continuously operating pasticceria, settled in Piazza della Repubblica since the early twentieth century. Pastries and confections are still made on the premises, in rooms newly restored by a 2026 renovation that laid a single marble mosaic floor across bar and dining room.
