Toraya
Ichijo, Kyoto, Japan
Toraya has made wagashi since the early 16th century, when it began supplying confections to the imperial court in Kyoto before following the court to Tokyo in 1869. Its Kyoto Ichijo shop, near the old Imperial Palace, still occupies ground tied to that founding relationship and sells confections shaped to the season.
