They still maintain their own Villa Sofía farm in Antioquia, and roast on a Diedrich machine using infrared burners and a heat-exchanger system, which the company says cuts the roasting process's carbon footprint by roughly 30 percent.

The business runs wider than a single bag of beans: alongside roasted retail coffee, Cielo Tostado offers milling and green-bean sales to other roasters, and opens its facility for tours, letting visitors see the equipment and process the founders built their farming knowledge into.

It's a roastery run by growers first — the roasting technology and the environmental accounting are choices made by people who spent over a decade and a half on the other end of the supply chain, in the field rather than behind the roaster.
