Fundo Los Nichos bills itself as Chile's oldest working pisco distillery, aging spirit in niches cut into rock in the hills above Pisco Elqui instead of a conventional warehouse. The estate sells its reserve piscos and runs tastings directly, roughly an hour's drive up the Elqui Valley from La Serena.
