Julián Martín

Julián Martín dates to 1933, when Julián Martín García founded the business at Alto Campillo in Guijuelo, Salamanca, initially as a seasonal sideline meant to supplement family income. The company's own account of its history singles out July 18, 1936, when the founder lost an entire shipment of merchandise sent to Madrid — a setback the family credits with hardening the resolve that carried the business through the following decades. The first purpose-built factory went up on the current site during the 1940s.

Leadership has passed through several generations on the same ground: Julián Martín Rodríguez took over in the 1950s, Julián Martín Sánchez in 1988 — the period in which the company also became an official supplier to Spanish department store El Corte Inglés — and the Enrique García family assumed management in 2022. Along the way the business expanded into Portugal, acquiring two Portuguese pork operations and a farm there in 2005.

Today Julián Martín describes itself as dedicated exclusively to acorn-fed Iberian ham, shoulder, and sausage, produced above 1,000 meters in the sierras surrounding Guijuelo and sold through its own online shop as well as wholesale, with reported production capacity around 2,000 tons annually as of 2003. It is one of Guijuelo's founding-generation ibérico houses still trading under its original family name.
