London Sangaki

London Sangaki occupies a storefront on Leeland Road in West Ealing and describes itself, on its own site, as the "First Fresh Sangaki bread in Uk & London." Sangak is Persian flatbread named for the stones it is baked on — sang means stone, and sangak means "little stone" — and the bakery's own account traces the bread's lineage to the Persian army, where soldiers are said to have carried the baking pebbles themselves and assembled a communal oven at camp. The site notes the bread is first documented in the 11th century, and that it stayed common across present-day Iran and Azerbaijan until its popularity declined after the Soviet takeover of the 1920s.

The baking method is unusual enough to be the shop's whole identity: dough is laid onto a bed of small, heated river stones inside a rotating oven, which leaves the finished loaf with the pitted, uneven surface that gives sangak its name. London Sangaki bakes two versions — a plain loaf and a seed-topped one finished with poppy or sesame — sized for the same purpose the bread has always served, a large flat sheet meant to be torn and shared, traditionally alongside grilled lamb kabab.

The bakery keeps regular posted hours, Monday through Saturday, and independent reviews describe customers making a special trip specifically for this bread, some on a standing monthly basis, which is a reasonable proxy for a shop that has built real, repeat local demand rather than novelty foot traffic. Iran's own domestic sangak and barbari bakeries proved, on a second dedicated search pass, to still have no individually named, verifiably operating establishment with a fetchable web presence — London Sangaki is offered here as the diaspora bakery genuinely dedicated to this specific bread tradition.
