That solution became a retail butcher shop in its own right, on Broadway in Williamsburg, historically tied to a small family of related restaurants under the Marlow Collective name — Roman's and Achilles Heel remain open, though the original restaurant, Marlow & Sons, closed permanently in April 2025.
Because the shop buys whole carcasses rather than pre-cut sections, it built a housemade product line to use everything that isn't sold as a chop or steak: sausages, smoked meats, pates, rendered fats, and stocks are all made on-site as part of what the shop frames as a zero-waste approach to whole-animal butchery. Around the meat counter, the shop also stocks locally sourced seasonal produce, farmstead cheese, specialty groceries, and naturally leavened bread from its sister bakery, She Wolf — closer to a curated neighborhood grocery anchored by a butcher counter than a single-purpose meat market.
