Radius Butcher & Grocery opened in East Austin in the exact storefront, 1912 East 7th Street, vacated when Salt & Time — Austin's original whole-animal butcher shop and salumeria — closed after fourteen years in 2024. The succession is not incidental: Salt & Time's own head butcher, Wesley Duke, continued in the same role at Radius, and the new shop kept sourcing from several of the same ranches and farms Salt & Time used, including Peaceful Pork and Greener Pastures Chicken.

Radius is led by founder Kevin Fishner with head butcher Joe Saenz, and both Saenz and executive chef Kim Plafke are alumni of Brooklyn's The Meat Hook, one of the businesses that helped define the American whole-animal butchery movement in the 2000s — giving Radius a direct lineage to that scene rather than a borrowed aesthetic. The shop describes itself as operating on a whole-animal philosophy of cooking, selling pasture-raised meat alongside seasonal organic produce and Gulf seafood, and deliberately stocking a narrow, curated grocery selection rather than a conventional supermarket range — its own description is "no towering center aisles of processed foods, no endless options in every subcategory."

As of an April 2025 report the shop was open and operating in East Austin, continuing the whole-animal butchery Salt & Time had built a fourteen-year reputation on rather than replacing it with something unrelated. Given Salt & Time's closure, this is the clearest currently-operating successor to Austin's original craft-butchery scene.
