The shop states its animals are pasture-raised with no antibiotics or added hormones, and that meat not sold fresh at the counter is turned into sausages, pates, rillettes, stocks, and sauces in-house rather than discarded — the standard test of a genuine whole-animal operation rather than a marketing label. Staff are described on the shop's own site as "butchers who are also chefs," offering cooking guidance at the counter, and the shop runs both in-person and online butchery classes.

It is open Monday and Wednesday through Sunday (closed Tuesdays), with a rotating daily sandwich as its one prepared-food concession — the business is otherwise a retail counter, not a restaurant.
