Founded in 2003 as a meeting place for Longyearbyen locals, Fruene hand-makes chocolate and baked goods at 78 degrees north and calls itself the world's northernmost café and chocolatier. The shop sells whole cakes, gift boxes of confections, and cinnamon buns alongside knitwear and slippers in a town where winter daylight disappears for months.
Founded in 2010 in the Holenaustet boat house by the harbour, this maker produces chocolate from scratch downstairs and sells it in the café and boutique above. Bars named for local landmarks such as Brudesløret and Flydalsjuvet carry regional flavours including brunost, blue cheese and aquavit.

Two friends - one raised on Lofoten's seaweed-covered shoreline, the other trained in Japanese cooking - founded Lofoten Seaweed in Napp to harvest wild seaweed from Arctic waters. Their range turns that harvest into pantry products such as seaweed-infused dark chocolate, built around the archipelago's tang and kelp.
