It was founded by Mayé Lepoutre, who came to bread by way of science rather than a family oven: a biology degree earned in Mexico, then a master's in plant biology in Lyon, before she trained as a baker and found herself pulled toward fermentation as a subject in its own right.

Every loaf here is made with 100% natural sourdough starter and 100% organic grain, milled from artisan wheats rather than standard commodity flour. Lepoutre has described bread as "raw, living and unadorned," a line that doubles as the shop's working philosophy — long, slow fermentation handled with the same attention she once gave a lab bench, with nothing added to speed it up or smooth it over.

It is a small, single-address operation, open Tuesday through Saturday, without the multi-city ambitions of some of Lyon's other new-wave levain bakeries. Local press has covered the shop as an example of Lyon's own sourdough revival taking hold outside the capital, describing Lepoutre as a baker whose scientific training shows in the precision of her fermentation schedules rather than in any showy technique.
