Chleba a Máslo – Pekárna Letná

Chleba a Máslo ("Bread and Butter") occupies a corner bakery in Prague's Letná district that had already been a neighborhood bakery once before: the site operated as a family bakery from 1920 until 1989, then sat closed through the decades that followed. In 2018, new owners who had themselves grown up in Letná reopened it, explicitly framing the project as restoring the corner bakery to a neighborhood that had gone without one — not a new concept borrowing old atmosphere, but a real reoccupation of a real address with a documented working history.

The recipes are the other half of the continuity claim: the bakery states its rolls and cakes follow family recipes handed down from a grandmother in the Šumava region, the forested area along Czech Republic's border with Bavaria and Austria known for its own rustic baking traditions. Their bread and buttered rolls are described as having a distinctive soft, flavorful structure, alongside sourdough loaves, rye bread, French baguettes, and a gluten-free rice-flour bread baked daily — a range that covers both the traditional Czech table and the dietary needs of a modern city clientele.

Production runs continuously through the day, with the bakery pulling fresh cakes from the oven roughly every ten minutes so customers can buy them warm — a working rhythm the shop describes directly rather than as marketing gloss. Five years into the current ownership's run (as of the bakery's own account), it reads as a genuine, still-operating link between Prague's pre-war neighborhood bakery culture and its present one, rather than a themed recreation of either.
