Chocolate Springs Café

Chocolate Springs Café stands at 55 Pittsfield Road in Lenox, in the Berkshires. Everything in its case is made by hand on the premises. Joshua Needleman, the chocolatier who created the café, entered kitchens young at a Japanese restaurant called Shuji in his home state. He graduated from the Culinary Institute of America in 1994 and went to France to learn the classical repertoire. He later worked at Wheatleigh in Lenox and at La Maison du Chocolat before opening his own shop. By 2026 it had been trading for 22 years. The café is decorated with a Japanese restraint while the chocolate follows a European tradition. Ganaches and bon-bons share the case with mousse cakes and pieces flavoured with matcha. House flavours include green tea and lavender honey. The counter also serves gelato and pastries. Coffee and espresso are poured beside a hot chocolate that has won awards. Needleman and his chocolatiers can be seen working in the café during the day. The business is owner-run and ships only within the country because of the perishable product.
