Molino del Gil (Aceites Gil)

The Gil family has pressed olives at this mill since 1900, drawing on roughly 6,000 trees across one of Europe's oldest olive-growing districts, some over a thousand years old and still hand-picked because their size defeats mechanical harvesters. Four generations in, the mill pairs that hand-harvest tradition with modern centrifugal extraction to produce single-varietal Picual, Arbequina, and Empeltre extra virgin oils.
