Tivoli Road Bakery sits at 3 Tivoli Road in South Yarra, Melbourne, run on a stated philosophy that great bread only needs flour, water, and salt — no additives, no dough improvers, no stabilizers. It is a plain-spoken claim, but it is the actual operating standard the bakery describes for itself: certified organic flour, hearth-baked on stone, with nothing added to speed or mask the fermentation. That restraint places Tivoli Road inside the wave of Australian bakeries that rebuilt sourdough practice around long fermentation and minimal ingredient lists rather than commercial shortcuts, a shift that had real momentum in Melbourne through the 2010s.

The bakery's founder, Michael James, came to bread by way of pastry — trained in Cornwall and London (including a stint at Tom Aikens' two-Michelin-starred Pied à Terre), before relocating to Australia and working through Sydney's Bourke Street Bakery and Melbourne's Baker D. Chirico and MoVida Bakery. Tivoli Road opened after MoVida's own bakery arm closed in 2013, giving James a storefront of his own to apply what he'd learned about hearth bread and viennoiserie under other kitchens' names.
