Fol Epi

Fol Epi's own site describes itself as "an intentional outpost for a community driven and honest food culture in Victoria," founded in 2009 around a brick-fired oven and the bakery's own flour mill — a house-milling operation built into the business from its start rather than added later. Founder Cliff Leir, a Vancouver Island native, began baking at 19 in a brick oven he built himself, and ran Wildfire Bakery in downtown Victoria before opening Fol Epi.

The name is explained directly by Leir: it refers to "a rogue head of wild wheat that doesn't grow with the rest," and doubles, in his words, as a nod to bakers, who "have to be a little crazy to wake up so early." The bakery mills organic flour sourced from Saskatchewan on site, and bakes in a brick oven reportedly carried in by crane, burning sawdust briquettes brought in from elsewhere on Vancouver Island — production infrastructure built for a specific, small-batch approach to grain rather than a scaled-up commercial line.

The bakery's stated priorities extend past the bread itself: its own materials describe collaborating with small-scale local producers and maintaining fair employment practices for staff. Combined with the in-house mill, that positions Fol Epi as a grain-to-loaf operation rather than a shop working from purchased flour — a narrower, more specific claim than generic "artisan" branding, and one grounded in equipment (the mill, the crane-installed oven) rather than marketing language alone.
