Michalis Pahtikos forges Cretan knives by hand at 14 Sifaka Street in the old Mahairadika cutlers' quarter, continuing a trade his father Apostolos practised for 65 years. Blades are fitted with handles of bone, horn, olive wood and aspalathos, and the range runs from shepherd's and folding knives to engraved ceremonial pieces.
